San Francisco's restaurant record begins with the Gold Rush. Tadich Grill, opened in 1849 as a stand selling little more than coffee and fish and run by the Buich family since the 1920s, is generally documented as California's oldest continuously operating restaurant, a claim the Old Clam House (1861) has disputed. The same year, the French immigrant Isidore Boudin set up a bakery on Dupont Street (now Grant Avenue), leavening French-style loaves with local wild yeast — the origin story attached to San Francisco sourdough.

The city's drinking culture was shaped by port access and boomtown money. The Bank Exchange and Billiard Saloon, opened in 1854 in the Montgomery Block, was the address for Pisco Punch, associated with bartender Duncan Nichols, who declined to disclose the recipe; the bar closed with Prohibition and the drink was reconstructed only decades later by historians.

The modern era is defined by California cuisine, credited to Alice Waters and chef Jeremiah Tower at Chez Panisse across the bay in Berkeley, and built on direct sourcing and Mediterranean technique. In the city itself, Zuni Café — founded in 1979 by Billy West and led from 1987 by Chez Panisse alumna Judy Rodgers — became a canonical statement of that cooking, wood-fired oven and all.
