Washington's documented dining record begins with the saloon and the raw bar. Old Ebbitt Grill dates its lineage to 1856, when innkeeper William Ebbitt opened a boarding house; the present room opened in 1983, and oysters remain among its principal draws — a Chesapeake inheritance still legible in the region's crab houses, where Maryland blue crabs are steamed under Old Bay. The Gin Rickey, poured at that bar, is treated locally as the city's classic cocktail.

The half-smoke, a spicy chili-dressed sausage of uncertain origin, is the District's signature dish, inseparable from Ben's Chili Bowl, opened in 1958 by Ben and Virginia Ali at 1213 U Street NW. Virginia Ali has recounted that segregation determined where a young Black couple could open at all; the restaurant survived the 1968 unrest and remains fixed to U Street, the corridor known as Black Broadway.

Migration rewrote the map again. Following Ethiopian refugee arrivals in the 1970s and 1980s, a Little Ethiopia formed around Ninth and U Streets NW, later extending across Northern Virginia and suburban Maryland — making injera, wat, and the coffee ceremony part of the capital's standing culinary vocabulary rather than an adjunct to it.
