Seafood restaurant opened in Charleston, South Carolina, in 2018 by chef-owner James London, who sources from area fishermen and farmers and revises the menu daily according to catch and season. London, Charleston-born and trained at The French Culinary Institute, cooked as executive chef at the Japanese restaurant Niko in SoHo and worked in San Francisco before returning to open the restaurant. The forty-seat dining room operates on a same-day wait list beginning at the 5pm opening, and parties are capped below eight without prior arrangement.
