Fergus Henderson (b. 31 July 1963, London) trained as an architect at the Architectural Association before entering professional kitchens, cooking at Smith's in Covent Garden and, from 1992, running the dining room at the French House pub in Soho with his wife Margot Henderson. In 1994 he opened St. JOHN in a former smokehouse on St John Street, Smithfield, in partnership with Trevor Gulliver, where as head chef he established the nose-to-tail approach set out in his 1999 book Nose to Tail Eating: A Kind of British Cooking; the restaurant received a Michelin star in 2009. He and Gulliver opened St. JOHN Bread and Wine at 94-96 Commercial Street, Spitalfields, in 1903 as a bakery-led second site that developed into a full restaurant, and he was appointed MBE in 2005 for services to gastronomy.
