Joshua Skenes trained at the French Culinary Institute in New York and co-founded Saison in San Francisco, which began as a pop-up in the Mission District in 2009 before settling in South of Market; under his direction its wood-fire cooking held three Michelin stars from 2014, and he relinquished control of the restaurant in April 2019 to Laurent Gras. In September 2018 he opened Angler at 132 The Embarcadero as owner and chef, a seafood restaurant built around a long open hearth that was widely named among the year's best new restaurants and received a Michelin star, and was followed by a Los Angeles location. He has since worked on later ventures including Lynx in the Los Angeles Arts District.
