Opened at 32 Jones Street in the West Village, Cynthia seats thirty in a single room arranged around an open kitchen, where a six- to seven-course tasting menu is finished in view of the dining room. Executive Chef Sherry Cardoso's cooking follows the season and draws on French, Asian, and Latin references, with trimmings and offcuts redirected into sauces, pastas, and breads under a zero-waste practice; the restaurant was founded by Claire DuBois and takes its name from her aunt. Orlando Franklin McCray directs the bar and Eva-Marie de Rocquigny the wine list, both sourced from small producers; service runs Tuesday through Saturday, 5 to 11pm.
