The contemporary menu is built for passing across the table — scallop crudo, trout mousse, trottole vongole, a prawn pot pie — with dry-aged meat at its center, including a pork chop aged 35 days and plated with quenelles of peach mostarda and pork belly seasoned with fennel pollen. Earlier in the day the address operates as Confidant Luncheonette, a daytime service drawing on New York's diner and delicatessen traditions; the restaurant also runs a chef's counter and a seasonally rotating à la carte list, and holds a place in the Michelin Guide as a selected restaurant.
