Alice Louise Waters (b. 1944, Chatham Borough, New Jersey) opened Chez Panisse in Berkeley, California, in 1971 with Lindsey Shere, establishing a daily-changing fixed-price menu built on local, seasonal produce sourced through direct relationships with regional farmers and ranchers; a more informal upstairs café followed in 1980. Her work at the restaurant is closely associated with the development of California cuisine and the farm-to-table movement in the United States, and she has published cookbooks including the Chez Panisse Menu Cookbook (1982), Chez Panisse Vegetables, and Fanny at Chez Panisse. In 1992 the James Beard Foundation named her Outstanding Chef and Chez Panisse Outstanding Restaurant; she founded the Edible Schoolyard at Berkeley's Martin Luther King Jr. Middle School in 1995 and the Chez Panisse Foundation, later the Edible Schoolyard Project, in 1996, and received the National Humanities Medal in 2015.
